Directions
- Cut off the stems and steam the spinach for one minute using a pan. Remove from the pan when steamed.
- Add the potatoes to the water in the same pan and bring to a boil. Once boiling, bring down to a simmer for around 10-12 minutes. Potatoes should be firm.
- While the potatoes are boiling, dice the shallots.
- Drain the potatoes in a colander. Rinse with cold water to cool, then cut into small cubes (1/2 inch).
- Add butter to the pan and melt on a medium heat. Saute the diced shallot for 5 minutes. Add thyme, pepper, spinach and potatoes. Stir continuously for another 10-15 minutes until the potatoes are cooked all the way through.
- Serve up and enjoy!
