Directions

  1. Preheat oven to 400°F. Spray individual baking dishes or a flat casserole dish with non-stick spray.
  2. Wash mushrooms and dry thoroughly. Slice mushrooms into 1/2 inch thick slices.
  3. Heat oil in a large frying pan over high heat. Sauté mushrooms until all liquid has evaporated, about 6-8 minutes. Season with salt and pepper, then transfer to baking dishes.
  4. Break eggs over the mushrooms in each dish. Season with salt and pepper, and sprinkle with Parmesan cheese.
  5. Bake until eggs are done to your liking, about 10 minutes for firm whites and partly-soft yolks. Serve hot.
