  1. Preheat the broiler to high and position the oven rack in the middle. Line a baking sheet with foil.
  2. Spray both sides of the mushroom caps with olive oil cooking spray. Season with ¼ teaspoon kosher salt, ⅛ teaspoon pepper, and ¼ teaspoon garlic powder. Broil for 5 minutes on each side, until just tender.
  3. Remove the mushrooms from the oven and switch the oven setting from broil to bake at 400°F.
  4. Crack an egg into each mushroom cap and sprinkle with Parmesan cheese. Bake for 15 minutes, or until the egg whites are set.
  5. Season the eggs with the remaining ¼ teaspoon salt and ⅛ teaspoon pepper. Garnish with chopped parsley and serve.
