- In a medium bowl, combine the chicken strips with half of the olive oil, half of the lime juice, half of the chili powder, half of the ground cumin, half of the salt, and half of the ground pepper. Marinate for 15 minutes.
- Heat a large nonstick skillet over medium-high heat. Add the marinated chicken tenders and cook for 1 minute on each side. Transfer to a plate.
- Reduce the heat to medium and add the remaining olive oil. Sauté the onion until tender, about 4 minutes. Stir in the garlic, remaining chili powder, cumin, salt, and pepper. Cook for 30 seconds.
- Stir in the quinoa, halved green beans, chopped tomatoes, and chicken broth. Bring the mixture to a boil, cover, and simmer for 15 minutes.
- Nestle the chicken strips into the quinoa mixture and pour in any accumulated juices. Re-cover the skillet and continue to simmer until the chicken is cooked through and the quinoa is tender, about 15 minutes.
