  1. In a medium bowl, combine chicken thighs with rosemary, paprika, salt, and pepper, tossing to coat evenly.
  2. Heat 1 teaspoon of olive oil in a large nonstick skillet over medium-high heat. Cook the chicken for 2 minutes on each side, then transfer to a plate.
  3. In the same skillet, add the remaining olive oil and cook the onion and mushrooms until tender, about 4 to 5 minutes.
