- Place the chicken thighs in a medium bowl. Add rosemary, paprika, salt, and pepper, and toss to coat evenly.
- Heat half of the olive oil in a large nonstick skillet over medium-high heat. Add the chicken and cook for 2 minutes on each side. Transfer to a plate.
- In the same skillet, heat the remaining olive oil. Add the onion and mushrooms, cooking until tender, about 4 to 5 minutes.
- Stir in the quinoa and chicken broth. Bring to a boil, then cover, reduce heat, and simmer for 15 minutes.
