Directions
- Cook soba noodles according to package directions. Drain and set aside.
- Spray small sauce pan with olive oil spray. Sauté mushrooms, ginger, and garlic until mushrooms are soft and release their liquid. Add kale. Cook 1 minute more. Add miso and water. Heat thoroughly.
- Place soba noodles in bowl. Pour miso and mushroom mixture over noodles. Enjoy!
