- Preheat the oven to 375°F. Grease a 9x13-inch baking dish with non-stick cooking spray and set aside.
- Cook the quinoa according to package instructions.
- Season the chicken breast with salt and pepper. Heat olive oil in a large skillet over medium heat and cook the chicken for 5 minutes, then flip.
- Add water to cover the chicken, cover the skillet with a lid, and cook for 7-10 minutes until the internal temperature reaches 165°F. Set aside to cool, then shred.
- Once the quinoa is cooked, fluff with a fork and season with salt and pepper. Transfer to a large bowl.
