- Season chicken breasts with salt and pepper, then lightly dust with flour.
- Beat egg white with buttermilk in a shallow bowl. In another bowl, mix breadcrumbs and Parmesan cheese.
- Dip chicken in egg mixture, then dredge in breadcrumb mixture. Set aside.
- In a nonstick pan, melt 1 tbsp butter with olive oil over medium-high heat. Add chicken, cover, and cook 4-5 minutes until browned. Flip, add remaining butter, cover, and cook another 4-5 minutes until internal temperature reaches 165°F.
- Remove chicken, add broth and lemon juice to pan, and heat until sauce is slightly reduced, about 2 minutes. Pour over chicken to serve.
