Directions
- In a bowl, mix together the eggs, almond flour, flax, psyllium, spices, coconut milk, and lemon juice. Let the mixture sit while you cook the bacon.
- In a pan over medium-low heat, cook the bacon until crisp. Add the butter to the pan when the bacon is almost done.
- Chop the scallions and grate the cheese. Add the scallions, cheese, and baking powder to the mixture. Crumble the bacon and add it along with the bacon fat to the mixture.
- Slice an avocado in half, remove the pit, and cube the avocado while in the shell. Scoop out the avocado and gently fold it into the mixture.
