- Chop celery and stir into hummus mix.
- Slice pickle into thin rounds and line half the slices bread with these slices. Divide chickpea salad evenly over the slices. Top with roasted red pepper slices and remaining slices of bread. Press down lightly. If desired, cut away edges then cut each sandwich in half to make snack-sized sandwiches. Store in a covered container until ready to serve.
