Directions
- For the avocado spread: 1 medium avocado 3 tablespoons prepared hummus 1 raw garlic clove, mashed to a paste 3 teaspoon fresh lemon juice ¼ teaspoon paprika Salt and ground black pepper, to taste
- For the roll-ups: 1-2 large cucumbers 6 slices deli-style ham 6 slices deli-style mozzarella or muenster cheese 1 cup fresh arugula 1 cup fresh spinach 1 tablespoon fresh lemon juice 1 tablespoon olive oil or avocado oil
- Halve the avocado and remove the pit. Scoop the flesh into a bowl and add the lemon juice. Mash the avocado with a fork until it is mostly smooth. Add the remaining spread ingredients, and mix until completely combined and smooth.
- Wash and dry the cucumbers, and cut off the ends. Using a sharp knife or mandoline, slice the cucumber into very thin strips lengthwise.
- Lay the best-looking cucumber strips on a cutting board or other flat work surface. Blot away any excess moisture with a paper towel. Spread a thin layer of the avocado spread on each strip. Begin layering the ham and cheese on top of the slices, cutting each into strips to fit the cucumber as needed.
- Toss the arugula and spinach with the lemon juice and oil. Arrange a light layer of the greens on top of each strip.
- Starting at one end, roll the strips up carefully, keeping them as tight as possible without squeezing the ingredients out the ends. Secure each roll with a toothpick. Serve immediately.
