- Core and dice tomato.
- Place a skillet over medium-high heat and add olive oil. Add spinach and cook briefly until wilted, about 1 minute.
- Beat egg in a small bowl, then add to pan with spinach and stir gently until starting to set. When nearly set, add tomato and remove from heat.
