- Spray a large skillet with oil and heat over high heat. Add the ground turkey, seasoning with about half of the salt and cumin. Cook, breaking the meat up, until the turkey is cooked through, about 5 minutes.
- Push the meat to the side of the skillet and add the chopped onion and tomato paste. Cook for 1 minute.
- Add the black beans, corn, tomato, jalapeno pepper, garlic, freshly chopped cilantro, and water. Stir to combine.
- Add the quartered and sliced zucchini with remaining salt and cumin. Mix well, cover, and cook on low for 4 to 5 minutes, or until the zucchini is tender-crisp.
