Ingredients

Directions

  1. In a small saucepan, heat 1 tablespoon of olive oil over medium heat. Add shallots and cook for 5-6 minutes until tender. Stir in garlic and cook for another minute. Add apple juice and cider vinegar, cooking on high for 5 minutes until slightly reduced. Remove from heat and whisk in Dijon mustard, 3/4 cup olive oil, salt, and pepper until smooth. Cover and refrigerate until needed.
  2. Bring a large pot of salted water to a boil over high heat. Add pasta and cook until al dente, about 7-8 minutes. Drain and rinse with cold water. Set aside to cool completely.
  3. In a medium saucepan, combine green beans with 1 cup of water. Heat over medium until hot. Transfer beans to an ice bath for 2-3 minutes, then dry on a paper towel-lined plate.
  4. In a large bowl, combine pasta, green beans, cranberries, raisins, almonds, and spinach. Toss to combine. Portion into 6 servings, top with sliced avocado, and serve with dressing on the side or drizzled over.
