Directions
- If your chicken is very thick, pound the chicken breasts with mallet to thin out the thicker parts to make the breast more even in width (do not pound too thin as you will need to slice the breast in half). Salt and pepper them.
- Defrost spinach in microwave according to package directions. Carefully drain as much water out of the spinach as possible. Mix the mayonnaise, garlic, spinach, and feta cheese together.
- Slice horizontally and create a pocket in the chicken. Stuff the breasts, holding them together with toothpicks at the seam.
- Sprinkle with paprika. Bake uncovered in a preheated 325 degree oven for 45 minutes or until done. Enjoy!
