  1. Season the salmon with salt and pepper. Heat olive oil in a large skillet over medium heat. Add the salmon, skin side down, and cook for 2-3 minutes until crisp. Flip and cook for another 2-3 minutes to your liking. Remove from skillet.
  2. In the same skillet, add butter, shallots, and garlic. Cook until the garlic is fragrant, about 2 minutes.
  3. Add crushed red pepper flakes, heavy cream, and cream cheese. Season with salt and pepper. Simmer over medium heat, stirring until smooth and creamy.
  4. Add Parmesan and spinach, cooking until spinach is wilted, about 3-5 minutes. Stir in lemon juice, parsley, and chives. Remove from heat and return salmon to the skillet.
  5. To serve, plate each piece of salmon and spoon the sauce over the top.
