- Line a medium rimmed baking sheet with parchment paper and set out 6 popsicle sticks. Peel bananas and place popsicle stick in center of cut end; place on baking sheet, cover with foil (or another wrap) and freeze for at least 4 hours, up to 48 hours in advance.
- Add chocolate chips to microwave safe bowl and melt on half power in 30-second intervals. Once the chips are partially melted, stir in coconut oil and continue melting in microwave until chocolate is smooth. You can also use a double boiler, or the stovetop on the lowest heat setting. Transfer melted chocolate into a bowl or glass jar, if dipping.
- Take frozen bananas out of freezer and prepare for dipping. First cover banana with nut butter if using, then move onto chocolate. You can cover with melted chocolate by spooning the chocolate over the banana, or dip the melted chocolate into the jar just move very quickly if you do this method.
- After you've dipped the chocolate, quickly add your choice of toppings and place back on the sheet pan.
- You don't have to wait to enjoy these. You can keep the bananas out while the chocolate coating sets and enjoy right away.
