Ingredients

Directions
- In a small bowl, combine soy sauce, lime juice, stevia, fish sauce, tamarind paste, and red pepper flakes. Set aside.
- Create zucchini noodles using a spiralizer or peeler. If unavailable, use a vegetable peeler to make wider strips.
- Heat half of the olive oil in a large pan over medium-high heat. Add zucchini noodles and cook for 2 to 3 minutes until tender but crunchy. Let them rest for 3 minutes to release moisture, then transfer to a bowl and drain excess water.
- Wipe the pan and heat the remaining olive oil over medium-high heat. Sauté garlic for 1 to 2 minutes until fragrant, then add scallions and sauté for another 1 to 2 minutes until tender.
- Lightly beat eggs in a small bowl and pour into the pan. Cook, stirring, until they solidify but remain moist.
- Add the sauce to the skillet with the scrambled eggs, then add the zucchini noodles. Cook for 1 minute until heated through.
