- Preheat oven to 350 Line baking sheet with parchment paper
- For sausage: cook onion in 1tbsp fat on med-high until softened, transfer to bowl and mix with meat, sage, s/p, and garlic powder, form 4 patties
- Home fries: melt 1tbsp fat in skillet and add sweet potato, cook 4 min turning to brown, add bell pepper and cook 2-3 min, spread on baking sheet and bake 5 min
- Cook sausage in skillet med-high 2 min each side
- Add sausage to baking sheet and bake 5-7 min until cooked through and home fries fork tender
- Heat last 1tbsp oil in pan on med and cook eggs over easy.
