  1. Place eggs in a saucepan in a single layer. Cover with cold water to about an inch over the eggs. Heat over high heat, then once boiling, cover the pan with a lid and turn off the heat.
  2. Let eggs stand for 12 minutes, then drain immediately and cool under cold water. Peel.
  3. In a bowl, mix together mayonnaise and curry powder. Chop eggs and gently stir them into the mixture.
  4. Season to taste with salt and pepper. Evenly divide the egg salad between half the slices of bread and top with the remaining slices.
