Directions
- Fry bacon in a small pan. Remove bacon from pan when cooked throughly. Pour some grease out of the pan, leaving a small amount behind.
- Cook eggs in bacon grease. Add salt and pepper to taste.
- Cut croissants lengthwise. Put egg, cheese, and bacon on one piece and cover with the other. Meanwhile, warm olive oil in a pan.
- Carefully place croissants in pan. Cook on med-high heat until crispy, turning occasionally.
- Remove sandwiches from pan and put onto a baking sheet. Bake at 350° until cheese melts. Serve immediately.
