  1. Fry bacon in a small pan. Remove bacon from pan when cooked throughly. Pour some grease out of the pan, leaving a small amount behind.
  2. Cook eggs in bacon grease. Add salt and pepper to taste.
  3. Cut croissants lengthwise. Put egg, cheese, and bacon on one piece and cover with the other. Meanwhile, warm olive oil in a pan.
  4. Carefully place croissants in pan. Cook on med-high heat until crispy, turning occasionally.
  5. Remove sandwiches from pan and put onto a baking sheet. Bake at 350° until cheese melts. Serve immediately.
