- Turn the instant pot on to sauté. add the sesame seeds and toast, stirring often, until golden and brown, 2 to 3 minutes. Press Cancel. Transfer to a small bowl.
- In the Instant POt, combine the rice, coconut milk, water, and salt. Lock the lid. Press Rice and cook (cooking time is auto set). Use the “natural Release” method for 10 minutes, then vent any remaining steam and open the lid.
- Fluff the rice with a fork and serve sprinkled with the scallion and toasted sesame seeds.
