  1. Preheat the oven to 400°F.
  2. Flatten the chicken breasts to an even thickness using a rolling pin or similar object, then cut into strips about 3/4 to 1 inch wide.
  3. Prepare three bowls: one with coconut flour, another with a beaten mixture of egg and coconut milk, and the third with shredded coconut.
  4. Coat each chicken strip in coconut flour, dip in the egg and coconut milk mixture, then coat with shredded coconut. Place on a baking sheet with space between each strip.
  5. Bake for about 10 to 12 minutes, until the chicken is fully cooked through to 165°F.
  6. Serve hot.
