- Melt the butter in a large pot over medium heat.
- Add the carrots and celery, season with salt and pepper, and cook, stirring often, until the vegetables are tender, about 5 minutes.
- Add the garlic and cook until fragrant, about 30 seconds.
- Add the flour and stir until the vegetables are coated.
- Add the chicken, thyme, bay leaf, potatoes, and broth. Season with salt and pepper. Bring to a simmer and cook until the chicken is no longer pink and the potatoes are tender, about 15 minutes.
- Remove from heat, discard the bay leaf, and transfer the chicken to a bowl. Shred the chicken with two forks and return to the pot.
- Serve garnished with fresh chopped parsley.
