  1. In a small bowl, whisk together peanut butter, one-third of the soy sauce, lime juice, half of the brown sugar, chili garlic sauce, and one-fourth of the ginger. Add water to achieve desired consistency.
  2. In a medium bowl, combine coconut milk, remaining soy sauce, curry powder, turmeric, garlic, remaining ginger, remaining brown sugar, and fish sauce.
  3. Place chicken and coconut milk mixture in a gallon-size zip-top bag or large bowl. Marinate in the fridge for at least 2 hours or overnight, turning occasionally.
  4. Drain the chicken, discarding the marinade.
  5. Preheat grill to medium-high heat. Thread chicken onto skewers, brush with canola oil, and season with salt and pepper.
  6. Grill the skewers, turning occasionally, until the chicken is cooked through and reaches an internal temperature of 165°F, about 12-15 minutes.
  7. Serve immediately with the prepared peanut sauce.
