Directions
- Whisk together peanut butter, one-third of the soy sauce, lime juice, half of the brown sugar, chili garlic sauce, and one-fourth of the ginger in a small bowl. Add water as needed to reach desired consistency.
- Combine coconut milk, remaining soy sauce, curry powder, turmeric, garlic, remaining ginger, remaining brown sugar, and fish sauce in a medium bowl.
- Place chicken and coconut milk mixture in a gallon-size zip-top bag or large bowl. Marinate in the fridge for at least 2 hours or overnight, turning occasionally.
- Drain the chicken, discarding the marinade.
- Preheat grill to medium-high heat. Thread chicken onto skewers, brush with canola oil, and season with salt and pepper.
