Directions
- In large skillet heat oil. Then sauté onion and garlic.
- Add diced chicken. Brown.
- Add broth, diced carrots and celery. Bring to a boil.
- Reduce heat. Cover and simmer for 10-15 mins.
- Meanwhile, in a separate pan melt butter. Stir in flour, salt and pepper. Bring to a boil. Cook and stir for 2 min until thick.
- Remove from heat; gradually stir 3/4 cup of cheese until melted.
- Stir over top of chicken mixture. Mix well.
- Coat baking dish with nonstick spray. Place noodles in baking dish then stir in chicken mixture.
- Bake uncover for 20 min at 350 degrees
- Coat with remaining cheese and allow to melt.
