  1. In large skillet heat oil. Then sauté onion and garlic.
  2. Add diced chicken. Brown.
  3. Add broth, diced carrots and celery. Bring to a boil.
  4. Reduce heat. Cover and simmer for 10-15 mins.
  5. Meanwhile, in a separate pan melt butter. Stir in flour, salt and pepper. Bring to a boil. Cook and stir for 2 min until thick.
  6. Remove from heat; gradually stir 3/4 cup of cheese until melted.
  7. Stir over top of chicken mixture. Mix well.
  8. Coat baking dish with nonstick spray. Place noodles in baking dish then stir in chicken mixture.
  9. Bake uncover for 20 min at 350 degrees
  10. Coat with remaining cheese and allow to melt.
