Directions
- Cook the pasta according to package instructions.
- While the pasta cooks, heat half of the olive oil in a large skillet over medium-high heat.
- Slice the chicken into thin strips, season with half of the salt and pepper, and cook until browned and cooked through, about 5 minutes. Transfer to a plate.
- Add the remaining olive oil to the skillet. Add mushrooms and onions, cooking until mushrooms release their water and begin to brown, about 8 minutes. Add minced garlic and chopped thyme, cooking for 1 more minute.
- Add broth, thyme, red pepper flakes, and remaining salt and pepper. Bring to a boil and reduce liquid by half, about 5 minutes. Stir in chopped sun-dried tomatoes and spinach, cooking until spinach wilts, about 20 seconds.
- Drain the pasta and return it to the pot. Add the mushroom-spinach mixture, chicken, and half of the Parmesan cheese. Toss to combine and top with additional cheese.
