Directions

  1. Cook the rice according to the package instructions.
  2. Rinse and pat the chicken breast dry with paper towels. Cut into 1-inch cubes and season with salt and pepper.
  3. Heat butter in a skillet over moderately high heat. Add chicken and sauté until browned, about 5-6 minutes.
  4. Transfer chicken to a plate and cover.
  5. Add olive oil to the pan and cook onions and garlic until onions are translucent, about 2 minutes.
