- Cut the chicken breasts into chunks. Heat olive oil in a pan over medium-high heat. Add chicken and cook for 10-12 minutes, or until cooked through and no longer pink. Drain excess liquid.
- Season the cooked chicken with taco seasoning. Transfer the chicken to the prepared casserole dish.
- In a bowl, combine the sour cream, diced green chilies, and salsa verde. Pour the mixture over the chicken in the casserole dish.
- Bake for 25 minutes. While the chicken is baking, shred the Monterey Jack cheese.
