- Place eggs in a pan, cover with water, and bring to a boil. Cover, remove from heat, and let sit for 10-15 minutes. Drain, peel, and set aside.
- Break or chop the cauliflower into small florets. Microwave in a covered container with a small amount of water, or steam on the stove until fork-tender.
- Drain cauliflower and place in a medium bowl. Chop the eggs and add them to the bowl. Season with salt and pepper.
- In a separate bowl, mix mayonnaise, mustard, lemon juice, garlic powder, onion powder, cayenne pepper, sugar, and pickle relish. Adjust seasoning to taste.
- Combine the chopped vegetables and dressing with the cauliflower and egg mixture. Garnish with herbs or paprika if desired. Chill until ready to serve.
