Directions

  1. Peel and grate the carrot. Slice the red bell pepper into thin strips. Combine all salad ingredients up to and including the first three seeds in a bowl.
  2. In a blender, blend the soymilk, peeled and cored apple, cashews, and balsamic vinegar until smooth. Toss with the salad.
  3. Toast the sesame seeds in a pan over medium heat for 4 minutes, shaking the pan frequently.
  4. Garnish the salad with currants and the toasted sesame seeds.
