Directions
- Preheat the oven to 400°F.
- Coat the chicken breast with olive oil and season with salt and pepper. Place on a baking sheet and bake for 15 minutes. Flip the chicken and bake for another 10 minutes until cooked through.
- Let the chicken rest for 10 minutes. Set aside 1/4 of the breast and wrap the rest for later. Shred the 1/4 piece with two forks.
- In a bowl, mix the shredded chicken, hot sauce, mayonnaise, carrot, celery, and onion.
- Butter the outside of each bread slice. Layer half of the cheeses on one slice, add the buffalo chicken mixture, top with remaining cheese, and close with the other bread slice.
- Heat a non-stick pan over medium heat. Grill the sandwich until golden brown and the cheese melts, about 2-4 minutes per side.
