  1. Preheat the oven to 400°F and grease 8 cups of a 12-cup muffin tray.
  2. Cook the bacon until crispy, chop it, and set aside.
  3. Grate the potatoes and squeeze out excess moisture. Dry with a paper towel. Combine with Parmesan cheese, and season with salt and pepper. Divide the mixture evenly among the muffin cups, pressing it evenly over the base and sides to form a case. Bake for 15 minutes.
  4. Sprinkle half the bacon and half the chives over the base of each potato cup. Crack an egg into each cup and sprinkle with the remaining bacon and chives.
  5. Bake for 10 minutes or until the egg is just set and the bacon is golden. Let stand for 5 minutes before removing from the pan. Enjoy!
