- Preheat the oven to 400°F and grease 8 cups of a 12-cup muffin tray.
- Cook the bacon until crispy, chop it, and set aside.
- Grate the potatoes and squeeze out excess moisture. Dry with a paper towel. Combine with Parmesan cheese, and season with salt and pepper. Divide the mixture evenly among the muffin cups, pressing it evenly over the base and sides to form a case. Bake for 15 minutes.
- Sprinkle half the bacon and half the chives over the base of each potato cup. Crack an egg into each cup and sprinkle with the remaining bacon and chives.
- Bake for 10 minutes or until the egg is just set and the bacon is golden. Let stand for 5 minutes before removing from the pan. Enjoy!
