  1. Soak rice noodles in very hot tap water for 30min
  2. Mix 1/4 cup of soy sauce with cornstarch and lemon juice.
  3. Slice steak in to thin strips. Cut against the grain. Soak in marinade while prepping and soaking noodles.
  4. Slice garlic cloves thin
  5. Slice green onions into long stalks. About 1.5 inches long.
  6. Skin carrots and cut into match sticks (julienne)
  7. Cut snow peas in to small squares
  8. Slice onion into thick slices
  9. Allow soaking time to elapse, giving the noodles time to soften and the meat time to marinate.
  10. Drain the meat into a bowl and save.
  11. Heat a large chef pan or wok to very high heat and add oil, then beef. Cook until beef is seared by not cooked all the way through
  12. Add white onions and garlic. Tossing occasionally and cooking until onions start to soften.
  13. Add carrots, Tossing occasionally and cooking until they start to soften
  14. Add peas, Tossing occasionally and cooking until they start to soften
  15. Add green onions, Tossing occasionally and cooking for about a minute
  16. Drain stir fry and place in a bowl off to the side. Clean the pan and reheat to med-high
  17. Drain noodles and toss with sesame oil
  18. Add half of the noodles to the pan and lightly brown. Depending on the heat of your pan, you may have to toss. Use large chopsticks and a small spatula or spoon to toss the noodles. Constantly toss and then spread them out so that they don't stick together. Do this for a minute or two.
  19. Add half of the saved marinade and maybe another tablespoon or two of soy sauce and toss. The noodles should darken but not too dark. Cook it in for about a minute
  20. Add in half of the stir fry and toss, then remove back to the stir fry bowl.
  21. Cook the remainder of the noodles the same way. Browning, tossing, spreading, and then adding the remainder of the saved marinade and another tablespoon or two of soy sauce.
  22. Add the remainder of the stir fry and previously mixed noodles to the pan and toss. Remove from heat.
