Directions
- Heat oil in a pan over medium-high heat. Add chicken and cook for 8-10 minutes per side or until cooked through and no longer pink. Let rest 5 minutes before chopping into bite sized pieces. Set aside.
- Slice pita bread so there are two large halves.
- Grill or broil inside halves of the pita until they are lightly toasted.
- On each half of the pita use 1 tbsp of BBQ sauce spread out like pizza sauce. Pile on equal portions of chicken, onions, peppers and cilantro. Top with Equal portions of cheese.
- On the grill or under the broiler (on low), cook the pizzette halves until crispy or to your liking.
