Directions
- Prick the potato with a fork in several spots and microwave on high for 4 minutes. Allow to cool for 5 minutes, then chop into 1/2-inch cubes.
- In an 8-inch cast-iron skillet, cook the bacon over medium-high heat until crisp. Remove the bacon, leaving the drippings in the pan.
- Add olive oil and diced potatoes to the skillet, cooking and stirring frequently until browned, about 5 minutes. Add spinach and stir until just wilted, about 1 minute. Season with salt.
- Create wells in the hash and crack one egg into each. Reduce heat to medium and cook until eggs are partially set, 2 to 3 minutes. Sprinkle with cheese, cover, and cook until cheese is melted and egg whites are set, 1 to 2 minutes.
- Chop the bacon and sprinkle on top. Garnish with pepper to taste.
