Directions
- Preheat oven to 350 degrees F.
- Melt butter over medium heat. Add leeks and asparagus. Season with salt and pepper. Cook 6-8 minutes. Let cool.
- Beat the eggs, half and half, salt, pepper and nutmeg in a small bowl.
- Spray pie plate with non-stick spray. Add cheese to the bottom, then asparagus/leeks, then egg mixture.
- Bake for 50-60 minutes, until golden brown on top. Let stand a few minutes before slicing.
