  1. Bring a pan of salted water to a boil.
  2. Add the asparagus and cook for 30 seconds. Add the peas and cook for another 30 seconds, then add the spinach and cook for 2 seconds more. Drain everything in a colander.
  3. Heat olive oil and butter in a large frying pan.
  4. Cook the leeks and garlic until soft, then add the cumin. Stir in the blanched vegetables and cook for 3-4 minutes. Season with salt and pepper to taste.
  5. Make wells for the eggs and crack an egg into each. Cook gently until the eggs are done to your liking (cover with a lid to speed up cooking if desired).
  6. Serve garnished with fresh chopped dill and red pepper flakes.
