- Cook bacon in a skillet over medium high heat. Drain, then chop bacon and set aside.
- Season the chicken with salt and pepper. Heat vegetable oil in a large skillet over medium-high heat. Brown the chicken breasts for about 2 minutes on each side. Remove from the skillet.
- Add minced garlic to the skillet and cook on medium heat for about 30 seconds. Deglaze the pan with a small amount of chicken stock, then add the remaining stock.
- Add half the chopped bacon to the chicken broth. Return the chicken to the pan, arranging lemon slices around the breasts. Simmer on low heat, covered, for about 20 minutes until the chicken is cooked through.
