Directions

  1. PREPARATION: Chop garlic, celery, tomatoes, scallions, and mint. Boil water. Peel and cook shrimp if not already cooked.
  2. Whisk first 4 ingredients (olive oil, lemon juice, garlic, and celery seed) in small bowl. Season dressing with salt and pepper.
  3. Place couscous in large bowl. Pour water over. Cover and let stand until water is absorbed, about 10 minutes. Fluff with fork. Add shrimp, tomatoes, celery, green onions, mint and capers. Mix in dressing. Chill until cold, about 30 minutes or up to 2 hours.
