Ingredients

Directions

  1. Heat 1 tbsp oil in a sauté pan over medium heat. Add shrimp and sauté for 4-5 minutes or until bright pink and tender. Remove from heat and set aside to cool and then chop.
  2. In a small bowl combine red onion, lime juice, olive oil, and a pinch of salt and pepper. Let them marinate at least 5 minutes to mellow the flavor of the onion.
  3. In a large bowl combine chopped shrimp, avocado, tomato, an jalapeño. Combine all the ingredients together, add cilantro and gently toss. Adjust salt and pepper to taste. Enjoy!
