Ingredients

Directions

  1. Preheat the oven to 350°F. Meanwhile, cook quinoa according to package directions.
  2. Add olive oil to a large roasting tray. Add the squash and toss in the oil. Roast for 10 minutes, then add cauliflower, cumin, turmeric, salt, and pepper. Roast for an additional 20 minutes.
  3. In a large bowl, combine cooked quinoa, lentils, kale, and radicchio.
  4. Once the vegetables are roasted and slightly cooled, mix them into the salad.
  5. In a separate bowl, whisk together tahini, balsamic vinegar, water, garlic powder, miso, and nutritional yeast until smooth. Adjust seasoning with salt and pepper.
  6. Pour the dressing over the salad and mix well to coat all ingredients.
  7. Serve immediately or store in a container in the fridge for up to three days.
