Directions
- Preheat the oven to 375°F.
- Boil the lentils and rice in the vegetable stock for 15-20 minutes, stirring occasionally. In the last 5 minutes, stir constantly to prevent sticking. Continue stirring over heat until the mixture resembles porridge.
- Heat the oil in a frying pan and add the sliced leek, diced red bell pepper, mushrooms, and diced zucchini. Cook over medium heat for 5-10 minutes, stirring occasionally, until the vegetables are soft.
- Combine the cooked lentils and vegetables in a large mixing bowl. Add paprika, cayenne pepper, and black pepper to taste. Mix well.
- Transfer half of the mixture to a baking dish and sprinkle with half of the shredded cheese. Add the remaining lentil mixture, smooth the top, and finish with the remaining cheese.
- Bake for 25-30 minutes until the cheese topping is golden brown and crispy.
