  1. Heat coconut oil in a large heavy-bottom pot or Dutch oven over medium-high heat.
  2. Add ginger and garlic, reduce heat to medium, and stir frequently for about 3 minutes until fragrant and golden. Add spices, seeds, and salt, and toast lightly while stirring for 1-2 minutes.
  3. Add diced tomatoes and cook for 2 more minutes until softened. Stir in coconut milk and bring to a simmer.
  4. Add cauliflower, red bell pepper, and zucchini, stir, cover, and let simmer for 10-12 minutes on medium-low heat until cauliflower is just tender.
  5. Taste and add a squeeze of lemon juice. Adjust salt and add cayenne if desired.
  6. Gently fold in tofu and chickpeas, stirring to warm through. Enjoy!
