  1. In a medium saucepan, bring the broth to a simmer. Stir in the polenta and cook, stirring frequently, until the liquid is absorbed and the polenta has a pudding-like texture, about 20-25 minutes. Turn off the heat, cover, and for extra creaminess, stir in almond milk. Season with salt and pepper, then set aside.
