- Make the barbecue sauce. Heat 1 tsp of olive oil in a medium saucepan over medium heat. Sauté the grated shallot and minced garlic until soft, about 3 minutes. Stir in the paprika, mustard powder, and chili powder for 20 seconds. Add tomato sauce, maple syrup, apple cider vinegar, and soy sauce, bringing to a boil. Simmer until slightly thickened, about 10 minutes. Reserve 1 cup for this dish and store the rest in the refrigerator.
- Combine the cooked lentils and 1 cup of barbecue sauce in a small saucepan, keeping warm. Season with salt and pepper to taste.
- Make the polenta. Heat the remaining 2 tsp of olive oil in a medium saucepan. Sauté the diced onion until translucent, about 5-7 minutes. Add vegetable stock and a pinch of salt, bringing to a boil. Gradually whisk in the ground millet until thickened. Remove from heat and serve with the warm BBQ lentils.
- Toss the parsley leaves and celery with olive oil, salt, and pepper. Serve this salad with the lentils.
