Directions
- blanch the beef: boil pot of water, add the beef until browned, then drain.
- heat the pot back over medium high heat. add ginger and garlic for a minute.
- add miso paste and hot sauce.
- add the beef back in. stir for 5 minutes.
- add soy sauce, brown sugar and rice wine. cook 2 minutes.
- add enough water to cover the beef. bring to a boil and add the star anise.
- lower heat, cover and simmer for 2-2.5 hours.
- meanwhile, cook the noodles. when done, divide between bowls.
- add the greens to the soup and let wilt. divide over the noodles.
