Ingredients
Rice wine vinegar
2 tbsp or 30g
Ketchup
1 ½ tbsp or 23g
Coconut oil
1 tsp or 5g
Cornstarch
2 tsp or 5g
Directions
- In a bowl, combine sugar, cider vinegar, rice wine vinegar, ketchup, soy sauce, and 2 tbsp water. Set aside.
- Heat coconut oil in a large skillet over medium-high heat. Add minced garlic and sauté for 2 minutes until translucent.
- Add chopped red and green bell peppers, stir, cover, and cook for 2 minutes.
- Stir in chopped broccoli, cover, and cook for 1 minute. Add chickpeas, prepared sauce, salt, black pepper, and cayenne. Reduce heat to medium, cover, and cook for 10 minutes.
- Adjust the sauce to taste by adding more vinegar, sugar, or salt if needed.
- Mix cornstarch with room temperature water and add to the pan. Stir, cover, and cook for 2-3 minutes until the sauce thickens. Serve and enjoy!
